Bondar Hope Springs Eternal Chardonnay 2024

Bondar Hope Springs Eternal Chardonnay is a McLaren Vale Chardonnay from the estate's new single-site range.

Hope Springs Eternal is a recent venture for Andre Bondar and Selina Kelly, built on a simple idea: find the vineyards they consider the best in McLaren Vale for a given variety, and make elegant, age-worthy wine from them with as little interference as possible. The house style leans towards restraint and structure over weight, in whites as much as reds, which means hand-picking in the cool of the morning, whole-bunch pressing, wild fermentation and seasoned oak. This is the Chardonnay in that range, and it is made in very small quantity.

Expect a taut, savoury Chardonnay with citrus, white stone fruit and a fine mineral finish. Serve at 12 degrees in a decent glass. Grilled fish, roast chicken, or a wedge of nutty hard cheese will all sit comfortably alongside.
