Bondar Junto Grenache Shiraz Mataro 2020

Bondar Junto is a six-variety Grenache-led blend from McLaren Vale.

Six varieties go into the 2020: Grenache at 68 per cent, Shiraz at 10, Mataro at nine, Carignan at seven, Cinsault at five and Counoise at one. The Shiraz comes off seventy-year-old Rayner vines growing on sand; the Grenache is split between Rayner, an eighty-year-old block at McLaren Flat and the Trott Wilpena vineyard in Blewitt Springs; the Mataro comes from the Kurrajong soils in the Willunga foothills. Everything ferments on indigenous yeasts with around 20 per cent whole bunches and spends eight months in old oak. Grenache leads, Shiraz fills out the middle, Mataro supplies the tannin.

Bright and spicy, with cherry, dried herb and a savoury finish, the tannin light and the acid cheerful. Lightly chill it, to 15 or 16 degrees. Roast duck, a lamb tagine, or a bowl of ragù.
