Description
Bondar Midnight Hour Shiraz is a Rayner Vineyard Shiraz fermented with all of its stems.
Full whole-bunch fermentation is a habit Andre and Selina picked up working harvests in the northern Rhône, and in 2022 every stem went into the ferment. That only works when the stems are ripe, which is why the old Seaview blocks at Rayner matter so much: planted in 1960 and 1990 in red-brown clay over limestone, organically farmed and mostly dry-grown, their small open canopies let sun reach the whole bunch. La Niña delivered a cool summer and autumn without the rain that often comes with it, so harvest started a fortnight late and the fruit hung into the shorter autumn days. Fifteen months in used French oak followed.
Red and black fruit with real aromatic lift and a lighter mouthfeel than the vintage before, layered with pepper and cola spice. Serve at 17 degrees. Duck, lamb backstrap, or roast vegetables with dukkah and plenty of olive oil.
