Description
Bondar Monastrell is a savoury, medium-bodied Mourvèdre from McLaren Vale, made in tiny quantity.
The Lacey vineyard at Willunga sits on rocky clay loam above the Kurrajong formation, ground growers here hold in high regard. The vines are approaching twenty years old and farmed with few inputs, and the cellar work matches: hand-picking, a portion of bunches left whole in the ferment, no additions, fifteen months in seasoned French hogsheads, then bottling without fining or filtration. Andre Bondar prefers the Spanish name for the grape over the more familiar Mataro, and the choice signals intent â spice and mid-weight poise, not the tannic heavyweights the region built its reputation on. Around a hundred dozen are made.
Perfume leads: dark berries, cracked spice and a bunchy herbal edge, with fresh structure carrying through to a long savoury close. Serve at 16 degrees. Slow-roasted lamb shoulder, grilled quail, or a plate of jamĂłn and olives all suit it.
