Description
Bondar Pétillant Naturel is a dry, crunchy McLaren Vale sparkling built from Cinsault, Grenache and Counoise.
Second release, and the blend has moved: 55 per cent Cinsault, 25 per cent Grenache and 20 per cent Counoise, the last a southern Rhône variety enjoying a revival in its homeland. Cinsault and Counoise both come off the Rayner vineyard, where the sand runs deep; the Grenache is from an organically managed, south-facing sandy block in Blewitt Springs. That is serious real estate for a wine of this kind. Méthode ancestrale means the original ferment finishes in bottle with no added sugar and no disgorgement, which is why it arrives dry, faintly cloudy and gently fizzy instead of taut and autolytic.
Strawberry and raspberry melt across the tongue, dry and crunchy, with a soft bead. Serve properly cold at 6 to 8 degrees and stand the bottle upright a day beforehand. Oysters, fried school prawns, or salted almonds before dinner.
