Bondar Vestige Grenache 2021

Bondar Vestige Grenache is a one-off bottling from 120-year-old McLaren Vale bush vines.

The source is a dry-grown vineyard on a gentle north-facing slope with deep sand, where gnarled century-old bush vines set fruit with comparatively thick skins — hence the texture wrapped around the red fruit. Forty per cent whole bunches went into the ferment, and the wine spent ten months in older French puncheons. This will not be repeated: the fruit is no longer available to Andre Bondar, which makes the bottling a genuine one-off. Bush-vine Grenache of this age is rare anywhere in Australia, and McLaren Vale holds more of it than almost any other region on earth.

Floral and herbal aromas circle ripe red fruit, with liquorice and a savoury undercurrent beneath. Brooding, plush and firmly framed. Decant and serve at 16 to 17 degrees with slow-roasted lamb, duck confit, or a mushroom and barley braise.
