Bondar Violet Hour Shiraz 2024

Bondar Violet Hour Shiraz is the estate's original wine, built from multiple blocks on the Rayner vineyard.

This was the first bottling Andre Bondar and Selina Kelly made, and it still anchors the range. The name came from a harvest sunset at the home vineyard, and Selina says it evokes purple velvet, flowers and softness. This release layers in lush spice from an Eden Valley clone Andre sought out for its Rhône-like aromatics. Vines up to 75 years old sit on deep sand with ironstone over limestone, and blocks of differing aspect each get their own treatment — some fermented as whole berries, others given longer on skins — before ten months in mature oak and a January blend.

Red fruit and char spice, with a light-footed elegance that is the point of the wine. Serve at 16 degrees, no decanting needed. Lamb loin chops off the coals, a mushroom and thyme pie, or hard cheese and quince paste.
