Description

Bonnaire Coteaux Champenois Cramant Nature is a still white wine from Champagne, made entirely from Chardonnay grown in the Grand Cru village of Cramant.

Coteaux Champenois is the appellation for the still wines of Champagne, a tiny production that predates the region's fame for sparkling wine and is worth making only in years ripe enough to carry the fruit without bubbles to lift it. Cramant lies on the Côte des Blancs, where a thin topsoil over deep chalk gives Chardonnay a lean frame, low alcohol and naturally high acidity. Bonnaire is a family grower based in the village and draws on its own Grand Cru parcels here. The wine is entirely Chardonnay, and the cuvée name points to a minimal-intervention approach in the cellar rather than to any dosage, since a still wine receives none. Made from the same fruit that would otherwise go into grand cru Champagne, it shows the site without the bubble.

This is a taut, dry, low-alcohol white rather than a rich one; serve at around 11 degrees with shellfish, river fish or soft cheeses.
