Bonnaire Terres des Buissons Cramant Grand Cru Blanc de Blancs Extra Brut is a single-parcel grower Champagne made entirely from Chardonnay grown on the Grand Cru slope of Cramant.
Cramant sits on the Côte des Blancs, the run of chalk slopes south of Épernay planted almost exclusively to Chardonnay and classified Grand Cru. The chalk lies close to the surface, drains freely and holds water in reserve, which is what gives these wines their combination of ripeness and cutting acidity. Bonnaire is a family grower based in the village, farming parcels across Cramant and neighbouring crus and vinifying them separately rather than blending everything away. Terres des Buissons is a named lieu-dit bottling drawn from a single site within the village, given extended ageing on lees in the cellar before disgorgement and finished as an extra brut with a dosage of just 1.5 grams per litre, so almost nothing is added back to soften it.
The very low dosage leaves the wine taut and saline rather than rich; serve at 8 to 10 degrees with oysters, raw fish or a plain roast chicken.
