Bubb + Pooley WKR Cabernet Sauvignon 2022

Bubb + Pooley WKR Cabernet Sauvignon is an estate-grown Cabernet from one of the rare Tasmanian sites warm enough to ripen the variety.

Bubb + Pooley is the Tasmanian label of winemaker Anna Pooley and her partner Justin Bubb, working alongside the family's Pooley Wines in southern Tasmania. The WKR wines come from the label's own estate vineyard rather than purchased fruit. Cabernet Sauvignon is a late-ripening grape and a rarity in Tasmania, planted only in the warmest, driest pockets of the south east, where a long, cool season can bring it to ripeness while keeping alcohol moderate and acidity fresh. The result is a more restrained, finely structured style of Cabernet than the mainland norm. The wine is matured in oak barrel and bottled under screwcap.

Firm but not heavy, it suits lamb cutlets, beef and hard cheeses; serve at around 17 degrees.
