Description

Burton McMahon Syme Pinot Noir comes from a single vineyard in the Yarra Valley.

Naming the grower's vineyard on the label is the point of this project: each site is kept separate through the cellar so that the differences between Yarra vineyards stay visible. Pinot Noir here is fermented with a portion of whole bunches and wild yeast, then matured in French oak with little new wood.

Serve at 15 degrees with duck, salmon or mushroom dishes. It develops over eight years.
