Description
Byrne Farm Chardonnay is a cool-climate Chardonnay from 25-year-old vines on Mount Canobolas.
Orange owes its style to altitude — every hundred metres of elevation drops the temperature about a degree — and this vineyard sits just above 800 metres on north and east-facing slopes. Above-average winter rainfall set the season up, a mild to warm spring gave even flowering, and a dozen days over thirty degrees in summer carried the fruit to full phenological ripeness. Hand-picked in early March, top-loaded into an open-slotted press and worked lightly, the cloudy juice was gently fined and fermented in 500-litre French puncheons with a quarter new oak. Monthly stirring for texture, no malolactic conversion, ten months in wood before a November blend.
Red apple and white stone fruit at the centre, the region's mineral acid line running underneath, a flicker of oak spice at the edge. Serve at 12 degrees. Good with grilled chicken, a pot of mussels, or brie and crusty bread.
