Camille Giroud Chambolle-Musigny 1er Cru Les Borniques comes off a 1.5-hectare premier cru lying beside Le Musigny and just above Les Amoureuses.

Few growers bottle this climat on its own, so the parcel is a rare sight under any label. The merchant house behind it started trading in 1865, took its present name in 1903, and has been in American ownership since 2001. Bunches go in largely de-stemmed, the ferment is slow and cool, and time in barrel uses only a modest share of new oak.

Violets, raspberry and wild strawberry lead the way, and the tannins are silky almost to the point of weightless. Best around 16°C with quail, duck breast or a mushroom tart.
