Description
Camille Giroud Volnay comes from a 0.36-hectare slice of Les Grands Champs at the foot of the hill, where clay dominates and limestone rocks break through.
Roughly 125 cases are made in a normal year, making this one of the smaller cuvées in the range; the vines went in between 1960 and 1980. The crop is de-stemmed entirely, cold-soaked for five or six days, then fermented in open vats with gentle punch-downs before fifteen months in barrel using ten to fifteen per cent new wood.
Red cherry, rose petal and a fine powdery tannin put this at the lighter, more scented end of the Côte de Beaune. Serve cool, around 15°C to 16°C, with roast pork, salmon or a simple roast chicken.
