Description
Cantine del Notaio “Il Sigillo” Aglianico del Vulture DOC is a powerful and age-worthy red from Basilicata, grown on the volcanic slopes of Monte Vulture in southern Italy. This is one of the country’s most distinctive terroirs, where ancient lava flows and mineral-rich soils give Aglianico its signature structure, depth and longevity. Often referred to as the “Barolo of the South,” Aglianico from Vulture is known for its intensity, firm tannins and ability to evolve beautifully over time.
Made from 100% Aglianico, harvested late in the season to achieve full phenolic ripeness, this is a deeply structured and serious expression of the variety. Extended maceration over 30 days builds concentration and complexity, followed by maturation in French oak barrels and tonneaux, then further ageing in bottle. Uniquely, the wine is aged in volcanic tuff caves carved into the mountain, where constant temperature and humidity allow for slow, graceful development.
This is a bold, cellar-worthy red defined by structure, depth and persistence - built for slow enjoyment and pairing with rich, savoury dishes like braised meats, game and aged cheeses, or even dark chocolate-based desserts.
