Castello della Sala Pinot Nero della Sala 2023

Castello della Sala Pinot Nero della Sala is a rare Umbrian Pinot Noir from the Antinori family's estate near Orvieto.

Pinot Nero is the one red variety that has really taken to this white-wine property, where a small four-hectare vineyard sits at around 400 metres above sea level on chalky soils with fossils and sandy sediments from the Pliocene period. The elevation gives the grape the cooler conditions it needs. First produced in 1990, the wine is made in small quantities. The grapes are destemmed and gently crushed, given a few days of cold maceration in small conical stainless steel tanks, then fermented for about a week. The young wine goes into 228 litre oak barrels, where it completes malolactic fermentation and matures for several months, followed by more time in bottle in the castle's old cellars before release.

Elegant and medium-bodied, with fine tannins, this is best served a touch cooler than most reds, at around 15 to 16 degrees. Try it with roast duck, quail, porcini risotto, grilled salmon or truffle pasta. It can be opened now, and a few years in the cellar will bring more complexity.
