Cavallotto Barolo Riserva Bricco Boschis Vigna San Giuseppe in magnum is the estate's flagship Riserva, from the steep parcel behind the cellar.

Castiglione Falletto sits at the centre of the Barolo zone, and Cavallotto has farmed the Bricco Boschis amphitheatre there for generations. Vigna San Giuseppe is the 2.38-hectare sub-parcel long considered the sweet spot of that vineyard: altitude without excess, excellent drainage balanced by enough water retention in the limestone and clay to keep the vines from stressing, and a soil mix of blue-tinted clay for power, limestone for freshness and sand for perfume. The vines are around sixty years old, planted to good clonal material and facing southwest. The wine had 28 days on skins and five years in large cask before bottling. In magnum the same wine ages more slowly still, the larger volume of glass to wine slowing oxidative development.

This is a bottle for the cellar rather than the table tonight; in time it suits braised beef, hare and aged alpine cheese. Serve at 16-18°C.
