Cavallotto Barolo Riserva Bricco Boschis Vigna San Giuseppe is the estate's flagship, from a 2.38-hectare parcel on the steep slope behind the cellar.

Castiglione Falletto sits at the centre of the Barolo zone, on a ridge where Tortonian and Helvetian soils meet, and Cavallotto has farmed the Bricco Boschis amphitheatre there for generations. Vigna San Giuseppe is the sub-parcel long held to be the sweet spot of that vineyard. It has altitude without excess, excellent drainage tempered by enough water retention in the limestone and clay to keep the vines from stressing in dry seasons, and a complex soil mix: blue-tinted clay for power, limestone for freshness and mineral drive, sand for perfume. The vines are around sixty years old and face southwest. The wine spent 28 days on skins and five years in large cask, the long, unhurried raising that defines the traditional school in this village.

It needs time and will reward twenty years or more; decant if opening young, and match with braised beef, game or aged Castelmagno. Serve at 16-18°C.
