Cavallotto Barolo Riserva Bricco Boschis Vigna San Giuseppe is the estate's flagship, from a steep parcel directly behind the cellar.
Vigna San Giuseppe is a 3.7-hectare parcel within the Bricco Boschis cru at Castiglione Falletto, long held to be the sweet spot of the vineyard. It has altitude, but not too much; excellent drainage, yet enough water retention from clay that the vines do not stress in dry seasons; and a complex mix of soils. Blue-tinted clays bring power, limestone adds freshness and mineral drive, and sand delivers the prettiness and perfume. Add especially small bunches from 60-year-old vines, unusual clonal material and a south-west exposure, and the components line up. This Riserva spent 28 days on skins followed by five years in large cask, the traditional regime Cavallotto has kept to for generations. Where the Riserva Vignolo offers more vertical lift and minerality, Vigna San Giuseppe is about ballast and texture.
Built for the long haul, with two or three decades ahead of it and a decant advisable in youth. Serve at 16-18°C with braised beef, game birds or aged hard cheeses.
