Cavallotto Dolcetto d'Alba Vigna Scot is a single-vineyard Dolcetto grown inside the boundaries of the Monprivato vineyard.
Dolcetto d'Alba is the everyday red of the Langhe, and most of it is made quickly in stainless steel for early release. Cavallotto takes a different route. Vigna Scot is 2.3 hectares of thirty-year-old vines within Castiglione Falletto's Monprivato, one of the most celebrated sites in Barolo, and the Dolcetto rows face east, making this a cooler, later-ripening corner of the vineyard. Mature vines and low yields give the fruit weight, and rather than tank the family raises the wine in cement and in 5,000-litre Slavonian botti. That choice does two things: it heads off Dolcetto's tendency to reduction, and it polishes tannins that can otherwise be coarse. The result is a serious, layered reading of a variety usually asked only to be cheerful.
Drink over the next five years with salumi, pizza, braised sausage or a plate of tajarin. Serve at 15-16°C.
