Cavallotto Langhe Nebbiolo 2018

Cavallotto's Langhe Nebbiolo is made from declassified fruit off the estate's Castiglione Falletto crus and could legitimately be labelled Barolo.

The Cavallotto family farms the Bricco Boschis hill at Castiglione Falletto, in the middle of the Barolo zone, and also holds parcels in Codana and Pernanno. This wine draws on mostly young-vine fruit from those three sites, which is why it appears under the broader Langhe denomination rather than as Barolo. Yields were held to around 38 hectolitres per hectare. The grapes were fully destemmed and fermented with indigenous yeasts, malolactic fermentation took place in cement tanks during the spring after harvest, and the wine was then aged eighteen months in large Slavonian oak botti before bottling without filtration. That is the same traditional handling the estate gives its Barolo, on a shorter timescale, and it gives a wine with genuine Nebbiolo structure that does not demand the long wait its senior bottlings do.

Approachable now and good for eight to ten years; decant if opened young. Serve with braised beef, mushroom risotto or hard alpine cheese at 16-18°C.
