Description
Cavallotto Langhe Nebbiolo is declassified fruit from three Castiglione Falletto crus, raised in the same way as the estate's Barolo.
Langhe Nebbiolo is the appellation that lets Barolo producers bottle Nebbiolo outside the strictures of the senior DOCG, and at Cavallotto it is not a lesser wine so much as an earlier one. The fruit comes from young vines in Bricco Boschis, Codana and Pernanno, all cru sites in Castiglione Falletto, cropped at around 38 hectolitres per hectare. The grapes are fully destemmed and fermented with indigenous yeasts, with the malolactic taking place in cement tanks during the spring after harvest. Ageing runs 18 months in Slavonian oak botti, the same large, neutral format used for the Barolos, and the wine is bottled unfiltered. The result is a smaller-scale version of the house style rather than an early-drinking wine dressed up in Nebbiolo clothing.
Drinking well now and good for five to eight years, it suits agnolotti, roast pork and Fontina. Serve at 16-18°C.
