Cavallotto's Langhe Nebbiolo is drawn from vines inside two Barolo crus, Bricco Boschis and Villero.
Langhe Nebbiolo is the appellation that catches everything a Barolo estate chooses not to bottle as Barolo, and the quality depends entirely on where the fruit comes from. In this case the lion's share is from the Melera lieu-dit of the Bricco Boschis hill, a little west of Vigna San Giuseppe and lower down the slope, supplemented by fruit from the family's holding of less than half a hectare in Villero, at the top of the hill above Vietti. The crop is held below 40 hectolitres per hectare, the bunches are destemmed and fermentation is spontaneous. Malolactic conversion takes place in cement tanks during the spring after harvest, after which the wine spends 18 months in Slavonian oak botti and is bottled unfiltered. The result reads as a scaled-down Barolo, with red-fruited perfume, fine tannins and a saline, mouth-watering close.
Good now with air and worth five to eight years in bottle; the longer it sits in a decanter, the more it shows. Serve at 16-18°C with veal, agnolotti or roast chicken.
