Description
Cavallotto's Langhe Nebbiolo is drawn from Bricco Boschis, the Castiglione Falletto cru the family has farmed as a monopole for generations.
Most of the fruit comes from the Melera lieu-dit of the Boschis hill, a little west of Vigna San Giuseppe and lower down the slope, which gives a Nebbiolo of the same lineage as the estate's Barolo but in a lighter frame. Yields were cropped below 40 hectolitres per hectare. The bunches were destemmed and went through spontaneous fermentation, with malolactic fermentation in cement tanks the following spring. The wine then aged 18 months in Slavonian oak botti and was bottled unfiltered. That is a longer, more traditional elevage than most Langhe Nebbiolo receives, and it accounts for the wine's structure and its habit of opening out slowly. As with the rest of the range, air makes a real difference: the longer it spends in a decanter or glass, the more it shows.
Ready now and holding six or eight years; decant, serve at 16-18°C, with agnolotti, roast pork or a semi-hard alpine cheese.
