Cayuse Impulsivo Tempranillo 2021

Cayuse Impulsivo is a Tempranillo from the En Chamberlin vineyard in the Walla Walla Valley.

Walla Walla and inland Spain have more in common than the map suggests: hot summers, hard winters, and the continental swing Tempranillo was built for. Christophe Baron planted the variety in 2000 in En Chamberlin, a four-hectare site north of the winery covered in the same basalt cobbles as Armada and the Horsepower blocks, with a foot and a half of silty loam over stone that runs deep. Farming is organic and biodynamic, yields sit under 30 hectolitres per hectare, and the fruit is destemmed and fermented as whole berries in concrete before eighteen months in foudres, half of them new. A share of each vintage goes back to Spain.

Sour cherry, leather, tobacco and a dusting of cedar from the new wood, with tannin that grips lightly and then lets go. Serve at 17 degrees. Lamb chops, jamón, or a paprika-heavy braise with plenty of good bread.
