Cellier Saint Benoit Chambines Savagnin Naturé is a topped-up Savagnin from a horse-ploughed slope that usually supplies the domaine's Vin Jaune.
Les Chambines is wedged between the lieux-dits of La Rouge and Les Charots on red marl soils, and is one of three Savagnin sites the domaine farms. The slope, planted in the mid-1980s, reaches 40 degrees in places and has to be worked by horse; a fault line bisects the vineyard that the small tractor cannot cross. Fruit from here is normally set aside for Vin Jaune, but in 2022 Benjamin Benoit was happy enough with it to select two barrels for the ouillé, or topped-up, style instead. He presses his Savagnin long and slow straight into his oldest barrels, where it ferments with no additions until the malolactic has finished. Of the two naturé bottlings shipped, Chambines is the fruitier, showing fleshy Anjou pear against green herbs and peppery spice.
Ready now and good for several years in bottle; serve at 10–12°C with trout, roast poultry or a gratin of potatoes and cheese.
