Cellier Saint Benoit Courbes Raies Pinot Noir comes from half a hectare of west-facing vines on fossil-rich limestone in Pupillin.

Pinot Noir is a legitimate if minor part of the Jura's mix, and this is a case for taking it seriously when the soil suits. The vines sit in the curving Courbes Raies vineyard on calcaire à gryphées, limestone heavy with fossilised molluscs, with the Pinot on the west-exposed slopes and the domaine's Chardonnay on the north- and south-facing ones. The oldest plantings date to around 1959, put in by Benjamin Benoit's grandfather, with more added by his father in the mid-1980s. Benjamin trained with Charles Lachaux in Burgundy, and the handling reflects that: whole-bunch fermentation in a large wooden tronconique vat, then ageing in 228-litre Burgundy barrels and larger 600-litre demi-muids. The style is polished and Burgundian enough that it can confound local tasters expecting something rustic.

Approachable now and worth five to eight years in bottle; serve at 16–18°C, or lightly cool, with roast duck, mushroom dishes or charcuterie.
