Description

Cellier Saint Benoit Gryphées Trousseau is a very small single cuvée named after the fossilised molluscs in the vineyard's limestone.

Trousseau is the firmer of the Jura's two main red varieties, deeper in colour and more tannic than Ploussard, and it needs a warm site to ripen properly. This bottling is cropped from just 0.25 hectares in the adjacent lieux-dits of Côte de Feule and Fonteneille, at 390 to 400 metres, on the calcaire à gryphées soils that give the wine its name. In 2022 the crop was small enough that the two parcels were blended into a single cuvée; in more generous years Benjamin Benoit bottles them separately. Because Trousseau ripens its stems more fully than Ploussard and carries more compact bunches, he is able to ferment it entirely as whole clusters. The wine was raised in used oak barrels and bottled without filtration, with nothing added along the way.

Drinking well now and capable of five or more years; serve at 15–16°C, slightly cool, with roast pork, sausages or a mushroom and Comté tart.
