Cellier Saint Benoit Arbois Pupillin Les Plantées Savagnin Naturé 2022

Cellier Saint Benoit Les Plantées is a topped-up Savagnin from 70-year-old vines on the blue marls of Pupillin, raised in a single old barrel.

Les Plantées sits higher on the hill than Chambines, on the classic blue marls of the Jura, the same formation found at Château-Chalon. The domaine farms 0.28 hectares here, planted around 70 years ago, facing north-west on a 30 per cent gradient. This is Savagnin made in the naturé or ouillé style, meaning the barrel is kept topped up so no veil of flor forms and the wine stays fresh and unoxidised, in contrast to the estate's Vin Jaune from the same variety. The 2022 fermented and aged on lees in a single old 228-litre barrel and was bottled unfiltered. Benjamin Benoit finds this site gives a more intense and complex Savagnin than Chambines, with a distinctly salty character he attributes to the blue marl.

Drinking well now and worth keeping for five years or more; serve at 10–12°C with roast chicken, river fish or a young Comté.
