Cellier Saint Benoit Vin Jaune 620ml 2014

Cellier Saint Benoit Vin Jaune is a single-cask Arbois bottling aged sous voile for nine years rather than the mandatory six, and sold in the traditional 620ml clavelin.

Vin Jaune is made from Savagnin left to age in barrel without topping up, beneath a veil of yeast that develops on the wine's surface, in the same fashion as biological ageing in Jerez. Benjamin Benoit's version comes principally from Savagnin in Les Chambines, and three decisions shape it. He selects his Vin Jaune barrel by barrel, choosing the least expressive and most tightly wound wines on the grounds that this leaves room for the chemistry of the veil to work. Unlike growers who age in humid underground cellars, the Benoit family found their best results come from barrels kept in the winery's purpose-built grenier, or attic. And he bottles after nine years rather than six, which he finds adds salinity and umami. The result is detailed and light-footed rather than heavy, closer to a Château-Chalon in shape.

It will keep for decades and an opened bottle holds for days; serve at 12–14°C in a tulip glass with Comté, chicken in a cream and morel sauce, or a curried dish.
