Description

Cep by Cep Coteaux du Layon is a sweet Chenin Blanc made from passerillé fruit grown on terraced schist in the heart of the Layon valley.

The Coteaux du Layon runs along a tributary of the Loire south of Angers and is the region’s classic source of sweet Chenin Blanc. This wine comes from Philippe Germain’s estate vineyards at Rochefort-sur-Loire, where, unusually for the Loire, the clay and schist soils are cut into an amphitheatre of terraces. The grapes are harvested passerillé, dried on the vine with little or no botrytis, which gives a purer, less honeyed style of sweetness. Fermentation is natural and takes place in neutral demi-muid, and it is stopped at around 80 g/L residual sugar, a level held in check by perky acidity and moderate alcohol. Orange blossom, citrus, honey and a touch of salinity lead to a plush, mouth-filling palate that stays clean thanks to that acidity and a floral-inflected finish.

Drinking well now and holding for ten years or more. Serve at 8-10°C with soft cheese, poached stone fruit or a lemon tart.
