Description

Cep by Cep Coteaux du Layon is a sweet Chenin Blanc made from passerillé grapes on terraced schist at Rochefort-sur-Loire.

The Coteaux du Layon follows the Layon valley through the Anjou Noir, where dark schist and clay soils and morning mists from the river create the conditions for sweet Chenin Blanc. This wine comes from Philippe Germain's estate vineyards at Rochefort-sur-Loire, in the heart of the valley, where the slopes are cut into an amphitheatre of terraces, an unusual arrangement for the Loire. The grapes are harvested passerillés, shrivelled on the vine with little or no botrytis, which concentrates sugar while keeping the fruit clean and the acidity intact. The juice ferments naturally and the wine is aged in neutral demi-muid. Fermentation is stopped at around 80 grams per litre of residual sugar, a level balanced by the wine's brisk acidity and its moderate alcohol, so the finish stays fresh rather than cloying.

It will keep for a decade or more and is made for the table, with blue cheese, a fruit tart or a soft washed-rind cheese. Serve at 8 to 10 degrees.
