Chaffey Bros Salvis Gratia Semillon 2023

Chaffey Bros Salvis Gratia Semillon is a dry, textural old-vine Semillon from the Fechner Vineyard.

The fruit is the old Madeira clone of Semillon, grown on the Fechner Vineyard in the Eden Valley. It was wild fermented, with a third of the wine matured on lees in French oak puncheons from the Sirugue cooperage, and the rest kept in tank for freshness. This combination gives a Semillon with a slinky, lanolin-like texture, flavours of lemon pith, honeysuckle and grilled cashew, and a lively, mineral line. Dave Brookes of Halliday Wine Companion scored it 93 points.

Pour it with pan-fried whiting, chicken and tarragon pie, or a Caesar salad. Chill lightly and consider a few years in the cellar, as good Semillon gains honeyed, toasty depth with time.
