Chambers Rutherglen Dry Flor Apera

Chambers Dry Flor Apera is an Australian fino-style fortified, aged under a film of yeast.

Flor is the layer of yeast that forms on the surface of the wine in a partly filled barrel, protecting it from oxygen and giving the dry, savoury, saline character of a fino sherry. Apera is the name Australian producers adopted after the term sherry was reserved for Spain under a European trade agreement. Very few Australian wineries persist with the style. Chambers Rosewood has been at Rutherglen since 1858.

Serve cold at 8 degrees with olives, salted almonds, jamón or anchovies. Drink an opened bottle within a week.
