Agrapart's house assemblage, drawn from seven villages and disgorged in October 2020.
Agrapart & Fils was founded at Avize in 1894 and has been run by Pascal Agrapart since 1984; he has taken it from four hectares to twelve, nine of them in the grand cru villages of Avize, Cramant, Oger and Oiry, with plantings around ninety per cent Chardonnay and ten per cent Pinot Noir. No herbicides or synthetic pesticides are used, the soils are worked mechanically, and a horse named Vénus is put to work on parcels where compaction matters. Everything ferments on native yeast and completes malolactic fermentation; the non-vintage wines begin in tank and then move to older casks, which builds texture without leaving an obvious oak mark. The 7 Crus is named for the seven villages behind it, the four Côte des Blancs grand crus among them, and is assembled with reserve wine from earlier years. Dosage across the range runs from nothing to about seven grams.
Ready now and able to hold a few years yet. Serve at around 8°C with oysters, sashimi or a fresh goat's cheese.
