Champagne's reputation for grower-made wines of precision rests on estates such as Bérêche et Fils, based at Ludes on the Montagne de Reims and run today by brothers Raphaël and Vincent. Brut Réserve is built on a single base vintage, which supplies around 65 per cent of the blend, with the balance drawn from the two preceding harvests. The assemblage is split roughly in thirds: Pinot Noir from Ludes, Trépail and Ormes, Chardonnay from sites across the Montagne de Reims and the Vallée de la Marne, and Meunier from Mareuil-le-Port. Average vine age is around 40 years, and the Ludes and Trépail fruit supplies tension against the depth of the Marne parcels and the reserve wines. Hand-picked grapes ferment naturally in barrel before ageing in barrel and tank, after which the wine spends some 36 months on lees in the cellar. Disgorgement is done by hand, with a dosage of just under 6 g/L, and the wine is bottled without filtration.

It drinks well on release and has the structure to develop for a decade or more, the magnum format slowing that evolution further. Pair it with oysters, roast chicken or a wedge of Comté, and serve at around 8°C.
