Champagne Bérêche et Fils Grand Cru Aӱ is a grower Champagne drawn from under a hectare of old vines in the village Peter Liem calls the most historically esteemed in the region.

Aӱ lies on the south-facing slope of the Grande Vallée de la Marne, a Grand Cru where Pinot Noir has always held the upper hand and whose wines were prized long before Champagne became a sparkling wine; the poet Alfred de Vigny wrote in 1853 that the mousse of Aÿ radiates happiness. The Bérêche family are growers at Ludes in the Montagne de Reims, and brothers Raphaël and Vincent now run the estate. Their fruit here comes from vines of more than forty years standing at 280 metres in the parcels of Brise Pot and Froide Terre, where topsoil no deeper than 30 centimetres sits over dense Campanian chalk. The blend is 80 per cent Pinot Noir and 20 per cent Chardonnay, fermented slowly in barrel and then aged on lees in bottle for 78 months. Dosage was 4 g/L.

Drinking well on release and worth cellaring for a decade or more. Serve at about 8°C with roast chicken, aged comté or a whole grilled snapper.
