Champagne Bérêche et Fils Grand Cru Cramant is a Blanc de Blancs from two plots in the village, one of them the Chemin de Châlons parcel known through Selosse.
Cramant is a grand cru of the Côte des Blancs with a reputation for the finest, most delicate Chardonnay in Champagne. Bérêche's fruit comes from Le Bateau in the north-east of the village and Chemin de Châlons at its southern end, both worked by Florent and Julien Mignon. The vines are more than 40 years old and were established by massale selection on chalky soils, which is where the balance between structure, finesse and fruit intensity in this cuvée begins. Raphaël Bérêche describes the release as ample but delicate, finishing in a cloud of chalk. Vinification is with indigenous yeasts in barrel, and the wine spent 54 months on lees before disgorgement with 3 g/L dosage.
Drinking now and rewarding a further three to five years. Serve at about 8°C with oysters, sashimi or a plate of raw scallops.
