Description
This Blanc de Blancs comes from two small plots in the Grand Cru village of Cramant on the Côte des Blancs.
Cramant is one of the Chardonnay Grands Crus at the heart of the Côte des Blancs, its deep chalk producing wines of finesse and length. The Bérêche brothers source from Le Bateau in the northeast of the village and from the Chemin de Châlons plot at its southern extreme, a site known through Selosse. The vines are owned and managed by Florent and Julien Mignon, are more than 40 years old and come from mass selection, and the fruit strikes a balance between structure, finesse and intensity that is difficult to find in a single village. The cuvée was vinified with indigenous yeasts in barrel and spent 54 months on lees before being disgorged with 3.3 g/L dosage, so the wine has depth as well as the cut Cramant is known for.
Drinking well now and worth keeping a decade. Serve at 8°C with oysters, scallops or a plate of sashimi.
