Champagne Egly-Ouriet 1er Cru Les Vignes de Bisseuil is the only Chardonnay-dominant cuvée in the range, from a village unusual in its corner of the Marne for having more Chardonnay planted than Pinot Noir.

Bisseuil sits just east of the grand cru communes of Aÿ and Mareuil-sur-Aÿ, both celebrated for Pinot Noir; Bisseuil is the local exception, with Chardonnay the majority planting. Egly-Ouriet farms 1.5 hectares on its south-facing slopes across two lieux-dits, bought by Francis and Annick Egly in anticipation of Clémence and Charles joining the domaine. Average vine age is 40 years. The blend is 70 per cent Chardonnay with 15 per cent each of Pinot Noir and Meunier, drawn from the 2018, 2017 and 2016 harvests — the first release of this cuvée to draw on three years. It was vinified entirely in barrel, bottled in 2019 and spent four years in the cellar, 48 months on lees, before disgorgement with 2 g/L dosage.

Drinking now and worth holding six to eight years. Serve at about 8°C with roast turbot, lemon chicken or a young comté.
