Champagne Egly-Ouriet Brut Les Prémices is an equal blend of the three main Champagne varieties from vines at Trigny, north-west of Reims, bottled here in magnum.

Trigny sits in the Massif de Saint-Thierry, west of Saint-Thierry and Merfy and east of Montigny-sur-Vesle, a corner of Champagne well away from the Egly family's home at Ambonnay. The 3.5 hectares span seven historic lieux-dits and came, like the Vrigny vines, from Annick Egly's side of the family; the fruit was sold off until Charles and Clémence Egly joined the domaine and began bottling it. This is only the second release. The blend mirrors the plantings, one third each of Pinot Noir, Chardonnay and Meunier, from vines averaging 40 years on clay and sandstone over chalk. The usual Egly practice applies, with low yields, hand harvesting, no inoculation, long lees ageing and no fining or filtration, though this cuvée is fermented and aged entirely in tank. Dosage was 1 g/L.

Drinking well now and good for several years, more in magnum. Serve at about 8°C with charcuterie, roast chicken or a mushroom tart.
