Champagne Jacques Selosse Mareuil sur Aÿ 1er Cru Sous le Mont is a blanc de noirs from a magnesium-rich chalk site on the Mont de Gruguet.

Sous le Mont is 100 per cent Pinot Noir from a single vineyard in Mareuil-sur-Aÿ, acquired by the domaine in 2003. The parcel has an easterly exposure and sits in the middle of the slope; for context, the south face of the same hill is home to the revered Clos des Goisses. The chalk here is unusually rich in magnesium and calcium, which gives the resulting wines a savoury cast often described in terms of bittersweet fruit and earth. Selosse himself notes that the presence of magnesium confers a bitterness comparable to Hepar water, and describes this as not the most powerful of his wines but the one that expresses the serenity of an eastern exposure. Farming and cellar work follow the domaine's usual pattern of low yields, barrel fermentation and minimal dosage.

Drink now or cellar for a decade. Serve at 8°C with roast pork, smoked eel or a mushroom tart.
