Fac-Simile is Jérôme Prévost's rosé, a Champagne made entirely from Meunier grown on his single vineyard at Gueux.

Prévost farms Les Béguines, just over two hectares on sandy, fossil-rich soil in the Montagne de Reims village of Gueux, and works with Meunier alone. He began making his own wine in 1998 with help from Anselme Selosse, and the wines are made in tiny quantities: fermented with natural yeasts in old barrels, given no filtration and very little dosage, and bottled with the harvest year indicated by an LC code rather than a declared vintage. Fac-Simile is the rosé, made by adding a small proportion of still red Meunier from the same vineyard to the base wine, which is otherwise vinified exactly as the white Les Béguines. Production is minute and the wine is allocated.

Drinking well now and worth keeping for several years; serve at about 8°C with charcuterie, roast quail or a soft cheese.
