Champagne Jérôme Prévost Les Béguines Climax LC12 is a single-cask bottling of Prévost's Pinot Meunier given a longer élevage, released in tiny quantity.
Jérôme Prévost farms around two hectares at Gueux, on the western edge of the Montagne de Reims, in a lieu-dit called Les Béguines planted on sand over chalk. The holding is almost entirely Pinot Meunier, a variety usually treated as a blending component and here bottled as a single-vineyard Champagne under the La Closerie label. Climax is drawn from the 2012 base, a year Prévost felt was his strongest since 2008. He set aside one demi-muid, gave it a longer élevage of twenty-four months on lees and then an extended period in bottle before release; 600 bottles were disgorged in late 2016 and offered to only four importers. The name is meant in the French sense of apogée, the furthest point something can be pushed, rather than the English one.
This is a rare chance to drink a Prévost with some years already behind it. Serve at about 8°C with roast chicken, aged comté or mushrooms on toast.
