Description
Champagne La Closerie is Jérôme Prévost’s négociant-manipulant cuvée, born of the frost-ravaged 2017 season when he applied for NM status in order to buy in fruit.
Those two letters allowed Prévost to purchase the crop from 0.4 hectares owned by his neighbour in Les Béguines, which let him release a Béguines from 2017, and they also gave him access to several other parcels at Gueux on the same Thanetian sands, plus a small plot at Janvry on clay. Most of these vines are tended by Jérôme and his team, and the rest are worked in close consultation, with Prévost setting harvest dates and making the selection. Often referred to as La Closerie & after the red ampersand on the label, this release blends 80 per cent 2022 fruit with 20 per cent reserve wine. The winemaking matches the estate label exactly: spontaneous fermentation and maturation in used barrels from 225 to 600 litres, no filtration or stabilisation, 23 g/L for the secondary fermentation, up to eighteen months on lees, then hand disgorgement with 2.5 g/L dosage.
Fully open and drinking now, with five to eight years in hand. Serve at 8°C with quality charcuterie, roast chicken or a mushroom tart.
