Champagne Laherte Frères Blanc de Blancs Brut Nature is pure Chardonnay from the family's chalkiest biodynamic sites in Chavot and Épernay, bottled in magnum.

The Laherte family has grown vines around Chavot, on the edge of the Côte des Blancs, since 1889, and Aurélien Laherte now farms its many small parcels biodynamically. The vineyards behind this cuvée are the chalkiest the family holds, on chalk and chalky clay marl with pockets of flint and schist. It is that chalk which drives the wine's racy, saline line, while the clay contributes the fruit weight and texture that stops a zero-dosage Champagne from turning austere. The Brut Nature is a blend of two vintages and includes up to 50 per cent reserve wine, built on fully ripe fruit. Primary fermentation takes place in barrique, foudre and tronconique cask, the wine then rests just over two years in bottle, and, like all Laherte Champagne, it was disgorged by hand.

Ready now and good for several years, the magnum slowing its development. Serve at about 8°C with oysters, tempura or a bowl of blue-eye ceviche.
