Champagne Laherte Frères Blanc de Blancs Brut Nature is 100 per cent Chardonnay from biodynamically farmed chalk at Chavot and Épernay, in double magnum.

Laherte Frères works from Chavot in the Coteaux Sud d'Épernay, and Aurélien Laherte has made the house one of the most closely followed growers in Champagne. This cuvée draws on the family's chalkiest sites, where chalk and chalky clay marl are interleaved with pockets of flint and schist; the chalk drives the saline, citric line of the wine while the clay supplies fruit weight and texture. Farming at these sites is biodynamic. The wine blends three vintages, with up to 40 per cent reserve wines, and this release is based on 2018. Primary fermentation takes place in barrique, foudre and tronconique cask, and the wine ages a little over two years in bottle. It is bottled without dosage and, like all Laherte's Champagne, disgorged by hand, here in April 2022.

Drinking beautifully now and, in this format, capable of a decade; serve at 8°C with oysters, sushi or roast poultry for a table of friends.
