Laherte Frères' Blanc de Blancs Brut Nature is a Chardonnay Champagne bottled without any dosage, from the family's chalkiest biodynamic parcels at Chavot and Épernay.

The Côteaux Sud d'Épernay is a stretch of hillside south of the town where the Laherte family has farmed for seven generations. The parcels behind this wine are the chalkiest they hold, biodynamically farmed, with soils rich in chalk and chalky marl and pockets of flint and schist through them. The chalk drives the saline, citric line that defines the wine, while the clay gives the fruit weight and texture that balance it. The blend covers two vintages and includes up to half reserve wine, all from fully ripe fruit, since a wine bottled with no dosage has nothing to hide behind. Primary fermentation takes place in barrique, foudre and tronconique cask, and the wine spends a little over two years in bottle before being disgorged by hand.

Drinking now and worth three to five years. Serve at about 8°C with oysters, sashimi or a fresh goat's cheese.
