Champagne Laherte Frères Blanc de Blancs Brut Nature is all Chardonnay from biodynamic chalk at Chavot and Épernay, bottled with no dosage at all.

Laherte Frères is based in the Coteaux Sud d'Épernay, and this cuvée is drawn from the chalkiest soils the family farms, at Chavot and in Épernay itself, with recent additions of Chardonnay from the Côte des Blancs premier crus of Vertus and Voipreux. The vineyards are biodynamically farmed, and the soils combine chalk and chalky marl with pockets of flint and schist. The chalk gives the wine its saline, citrus-driven line; the clay balances that with fruit weight and texture. This bottling is based on the 2022 harvest with 40 per cent reserve wines from the two preceding years. Primary fermentation is in barrique, foudre and tronconique cask, after which the wine spends just over two years in bottle. Disgorgement is by hand and no dosage is added.

Excellent now and will hold four to five years. Serve at 8°C with oysters, raw scallops or a plate of sashimi.
