Champagne Laherte Frères Grandes Crayères is a single-parcel blanc de blancs from Chardonnay planted on chalk at Chavot.

Les Grandes Crayères is one of the individual sites Aurélien Laherte bottles on its own, a parcel of Chardonnay at Chavot in the Coteaux Sud d'Épernay where the chalk lies close to the surface — the crayères of the name are the old chalk workings of the area. The house farms around seventy-five parcels in total, and the single-site wines are made to show what each one does. The fruit is pressed gently, fermented with indigenous yeasts in used oak barrels, and bottled without filtration. After an extended stay on lees it is disgorged with a very low dosage, and the disgorgement date is declared on the label along with the year.

Best given a little time in the glass, and it will keep developing in bottle. Serve at around 8°C with oysters, grilled fish or a hard alpine cheese.
